Breakfast bruschetta with home made paneer-cheese

Last Sunday.

To me there's something weirdly satisfying about meals where I've made as many components as possible from scratch. For breakfast last Sunday I probably did as much as I possibly could (unless someone donates me a cow... a garden... a farm somewhere further down south in a warm country...).

No-knead bread, tomato, basil, home made paneer, sea salt.

Home made yogurt with powdered goji berries.


Breakfast bruschetta, serves one

I n g r e d i e n t s
One ripe tomato (core removed), diced
10-15 cubes paneer (recipe here, or just use mozzarella)
Basil, minced (as much as you want)
A garlic clove
Olive oil
Balsamic vinegar
Sea salt

Bread of choice

I n s t r u c t i o n s 
1. Brush bread slices with olive oil, toast in the oven for 10-15 minutes.
2. Mix together tomatoes, cheese, basil, some olive oil and balsamic (to taste). Set aside.
3. When the bread slices are toasted, rub them with garlic.
4. Spoon the tomato mixture onto the bread. Garnish with basil, top with sea salt and some drops of balsamic. Serve right away.

  1. Näyttääpäs herkulliselta. :) Itsellä on myös pyörinyt tuo paneerin valmistus mielessä, ehkäpä ensi viikonloppuna...

    1. Ei se pahaa ollut ;) Kannattaa ehdottomasti testata paneerin tekoa! Maito, sitruuna ja suola aineksina, ei mikään mahdoton homma!

  2. Oih nam kuinka hyvältä näyttää! :) Tykkään kans tehdä ruokajuttuja mahdollisimman paljon itse, keittiössä hääräily vaan on ihan parasta :)
